It takes just minutes to make the muffin batter without any special equipment. Then you simply spoon the batter into a muffin tray – with or without cases – and bake for 20 minutes. Easy, fun, and tasty!

These muffins are best eaten hot from the oven. However, if you want to have them a couple of days later give each a quick 15-20 seconds in the microwave they’ll be good as fresh.

They’re also great served with a fresh salad in the warmer months or a bowl of soup or stew in the cooler months.

These easy muffins can be kept in the deep freezer for up to 2 months or in an airtight container in the fridge for 3-4 days.

Are these savory muffins gluten-free?

This recipe is not gluten-free due to the flour, but you could easily replace the wheat flour with gluten-free self-raising flour in the same quantity or use plain gluten-free flour, plus 2.5 tsp of gluten-free baking powder to make your own.

Ingredients for Breakfast Muffins

  • All-purpose flour – for gluten-free use all-purpose gluten-free flour.
  • Baking powder
  • Salt
  • Buttermilk -if you want you can replace buttermilk with Greek yogurt.
  • Vegetable oil
  • Diced ham – small diced ham works best.
  • Cheddar cheese – any diced or shredded cheese will work but our top pick is sharp cheddar for its richness. Stronger cheeses will add more flavor.
  • Fresh herbs – I like to add parsley but use what you have on hand or what’s growing in your garden. No fresh herbs on hand, a few shakes (1-2 tsp.) of dried herbs will work, too! You can also add some chopped spinach if you like.

Ingredients

  • 2 eggs

  • ½ tsp salt

  • ¾ cup buttermilk

  • 1/3 cup vegetable oil

  • 10 tbsp all-purpose flour

  • 2 ½ tsp baking powder

  • 1 cup diced ham

  • ½ cup Cheddar cheese, diced or shredded

  • 2 tbsp fresh herbs, optional

Directions

  • Preheat the oven to 180°C/350°F. Line a 12-hole muffin tin with cases.
  • Sift the flour, baking powder and salt into a large bowl and stir well. Set the bowl aside.
  • In a second bowl, mix the eggs, buttermilk, and vegetable oil until they are well combined.
  • Pour the wet ingredients into the bowl with the dry ingredients and beat with a wooden spoon or spatula until you have a smooth batter.
  • Add diced (or shredded) cheese and diced ham to the batter. Mix it all together and spoon evenly into muffin cases.
  • Bake for around 20 minutes in the preheated oven until cooked through and golden brown. Serve warm, or cool completely on a wire rack ready to pack in lunch boxes.
