These tips and tricks will help you to make the best brownies from scratch every time:

· Beating your sugar and eggs well (make sure you beat that sugar with the eggs until they are light, thick, and frothy), but do not overbeat your batter once the flour is added.

· Always use the best quality ingredients you can get. If you put in quality ingredients, you will get a quality result.

· Add a little salt – salt brings out the flavor whilst balancing out the sweetness.

· Add espresso powder – This makes the chocolate flavor richer, and the brownies will NOT taste like coffee. Coffee and brownies are a perfect pair, so why not put coffee in brownies. Makes sense, right?

· Sifting your dry ingredients. Sifting flour directly into the wet ingredients for your brownies will help prevent that clumping and will make your brownie batter smoother without removing any air.

Ingredients

  • 6 eggs, room temperature

  • 1 1/3 cup powdered sugar, sifted if lumpy

  • 2 teaspoon vanilla extract

  • 2 1/2 cup chocolate, melted

  • 1 cup butter, melted

  • 1 cup all-purpose flour, sifted

  • 1/2 teaspoon salt

  • 1/2 tablespoon instant espresso powder

Directions

  • Preheat the oven to 350°F. Lightly spray an 8×12 baking dish with cooking spray and line it with parchment paper. Spray the parchment paper.
  • In a large bowl, whisk well the eggs and powdered sugar. Make sure you beat that sugar with the eggs until they are light, thick, and frothy.
  • Melt butter and chocolate together and add them to the beaten eggs.
  • Sift flour directly into the wet ingredients. Add espresso powder and salt. Gently fold the dry ingredients into the wet ingredients until JUST combined. Be sure to not overbeat the batter.
  • Pour the batter into the prepared pan and use a spatula to smooth the top.
  • Bake for 15 to 20 minutes, or until a toothpick comes out with only a few crumbs attached (note: it’s better to pull the brownies out early than to leave them in too long).
  • Store in an airtight container at room temperature for up to 3 days. These also freeze well!
